Grilled Chicken
and Shrimp Satay Skewers

Serve these chicken and shrimp satay skewers and stay on track at your next dinner party.


 

Ingredients

fish sauce

1⅓ Tbsp

fresh lime juice

1⅓ Tbsp

soy sauce

2 tsp

minced ginger

1 tsp, fresh

agave nectar

1 tsp

agave nectar

1 tsp

garlic clove(s)

1 medium clove(s), minced

fresh boneless skinless chicken tenderloins

6 strip(s)

uncooked shrimp

8 large, peeled, deveined

cucumber(s)

1 Tbsp

cilantro

1 Tbsp

powdered peanut butter

3 tsp

water

1 Tbsp

jarred curry sauce

1 tsp

cooking spray

5 spray(s)

light unsweetened coconut milk

3 Tbsp


 

Instructions

1 To prepare skewers, combine 1 TB fish sauce, 1 TB lime juice, 2 tsp soy sauce, 1 tsp ginger, 1 tsp agave, and 1 minced garlic clove in a shallow dish.

2 Marinate chicken tenderloins in marinade in refrigerator.

3 When ready to cook, place chicken on small skewers.

4 Skewer two shrimp each on remaining 4 skewers.

5 Whisk together 3 Tbsp light coconut milk, 3 Tbsp peanut butter powder, 1 Tbsp water, 1 tsp fish sauce, 1 tsp red curry paste, and 1 tsp lime juice.

6 Preheat a grill or grillpan to medium high heat and coat with cooking spray.

7 Cook chicken and shrimp skewers for 3-4 minutes per side or until cooked through.

8 Garnish with optional diced cucumber and fresh cilantro and serve with Satay Sauce.
