Sweet, spicy, peanut-y chicken tenders make an amazing party dish, and the leftovers are delicious served over salad for lunch the next day. You'll love the combination of peanut butter powder, barbecue sauce, canned chipotle chiles, and spicy chili powder that you coat the chicken with as you're grilling them. Utilizing the grill or a grill pan means that the chicken will be cooked through and ready to go in just about 5 minutes. Top the chicken with some fresh chopped scallions and use whatever sauce you have leftover as a dip.
Ingredients
powdered peanut butter
¼ cup(s)
water
2 Tbsp, warm
barbecue sauce
¼ cup(s)
canned chipotle peppers in adobo sauce
2 tsp
chili powder
½ tsp
regular butter
1 tsp, melted
cooking spray
4 spray(s)
uncooked boneless skinless chicken breast(s)
1 pound(s), cut into 8 tenders
uncooked scallion(s)
2 Tbsp, chopped
Instructions
1 Stir together peanut butter powder and water.
2 Stir in BBQ sauce, chili in adobo, chili powder and butter.
3 Coat a grill or grill pan with cooking spray and preheat over medium-high heat.
4 Cook chicken until just cooked through, flipping once, about 2-3 minutes per side . Brush tops with some sauce and cook for an additional minute.
5 Serve garnished with scallions and with remaining sauce as a dip.
6 Serving size: 1 chicken tender and 1 Tbsp sauce.
